ED'S BLACK BEAN BROWNIES

$1 Betty Crocker brownies mix
Whole can of black beans (drained and partially mashed)
2 eggs
NO OIL

Bake normally.  The partial mashing allows some 
chunks to remain that may seem like you added nuts.  Not bad recipe for $1 box mix, 49 cent can of black beans. Ziplock to keep moist. You could add some chocolate chips if you feel the need to turbocharge it...

CHICKEN BACON RANCH POTATO BAKE

As seen on Skinny Recipes:
1/2 cup olive oil
1 tsp salt 
1 ranch dressing mix (dry powder) 
14 medium potatoes, cubed 
3 chicken breast, cubed 
2 1/2 cup shredded cheese 
1 cup crumbled bacon
1 cup green onions, chopped 
1 tsp black pepper

Preheat oven to 500°F.  
Spray 9×12″ baking dish with cooking spray.  In a large bowl combine oil, salt, pepper and ranch dressing mix. Add the potatoes to the oil mixture and toss well. Spoon potatoes into a large baking dish. Leave as much oil mixture behind as possible. Roast potatoes until crispy, about 1 hr. Stirring every 15 minutes. Cut raw chicken into bite size pieces. Add to oil mixture and toss well. In a separate bowl mix the cheese, bacon and onion.  When potatoes are crispy, remove from oven. Lower temperature to 400°F.  Top potatoes with raw chicken & cheese mixture. Bake for another 15-20. Allow to cool for 10 minutes. Serve with sour cream or ranch dressing and enjoy.

CLASSIC KMART SUBS

The classic Kmart recipe you remember, as seen on Food:
submarine rolls, White Soft Split Sarah Lee
slices salami, with the embedded peppercorns 
slices oscar mayer bologna 
slices oscar mayer honey-roasted ham 
slices kraft American cheese 
1⁄4 onion, sliced sliver thin 
1⁄2 ounce lettuce, shredded 
tomatoes, sliced 1/8 inch thick 
ounce banana pepper, yellow sweet mild banana pepper rings 
dill pickle, whole sliced sliver thin 
ounce french's yellow mustard

Slice all of your veg; dill pickle, tomato, lettuce and onion. Layout your meats in a stack and slice them half. Slice your cheese in half.

Open the rolls without breaking the hinge of the bread. Squirt on the mustard in a V shape pattern across both the top and bottom bun.

TOP BUN: Place 4-6 pickle slivers on the top bun. 

BOTTOM BUN: 4 salami halves. 2 bologna halves. 2 cheese slices. 2 ham halves. 4 tomato slices. Shredded lettuce. 4-8 pepper rings.

Carefully close the sandwich and wrap it in foil or plastic wrap and allow to sit either at room temperature or in the refrigerator, for 30 minutes.

Unwrap and serve!

 

 

Clover Bell's Recipes

Some favorites from Grandma Strickland's recipe book, transcribed as best we could...

MEATLOAF
1# hamburg
1 tsp. salt
1 onion chopped
1 green pepper chopped
4 stalks celery chopped
1 egg
10 crackers (crumbs)

Mix together & add milk to moisten.  Bake 350 for 1 hour

MACARONI & CHEESE
2 c. elbow macaroni uncooked 
1 1/2 c. milk 
2 tbs. butter 
1/2# cheddar cheese (extra sharp) + few slices of Velveeta 
2 tbs. flour 
1/2 tsp. salt 
1/8 tsp. pepper 

Bake at 350 in a greased ovenware dish about an hour. Plan it ahead of the meal by 1 hour so that it can absord all the liquid.

ROLLS
Mix together in pan:
2 c. lukewarm milk
1/2 c. sugar
2 tsp. salt

Stir in 1/2 c. shortening  (also).  Let pan cool until mixture is just warm to your finger.  Crumble into mixture 2 c. yeast.  Add 2 beaten eggs.  Add about 6 c. flour & knead.  Let rise once.  Punch down & let rise.  Then shape.  Bake 425.

 

 

Mammaw's Recipes

Some favorites from Great Grandma ("Mammaw") Violet Brown's recipe book, transcribed as best we could...

CHEESE-POTATO CASSEROLE
3 cups diced, cooked potatoes
1 1/2 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 teaspoon salt
2 cups hot milk
1 1/2 cups shredded cheese
2 tablespoons dry bread crumbs
1 teaspoon melted butter or margarine

Place potatoes in a baking dish or casserole.  Melt the fat; blend in flour and salt.  Add milk and cook until thickened, stirring constantly.  Add cheese and melted fat.  Sprinkle over the potato mixture.  Bake at 350 degrees F. (moderate oven) for 30 inutes or until brown.  Six servings.

BIG DADDY'S CHOCOLATE DESSERT
Crust: 1 stick of butter (melted), 1 1/2 C. flour, 1 cup chopped pecans.  Mix all ingredients together and press into 9x13" pan.  Bake at 350 for 20 to 25 min.  Cool and refrigerate for short time.

Filling: 2-8oz pkgs cream cheese, 2 cups powdered sugar (mix together).  Add 1 large (8oz.) Cool Whip.  Spread on crust and refrig. while amking topping.

Topping: 2 pkgs Instant Chocolate Fudge pudding or butterscotch or lemon.  3 cups milk.  Beat together then add 1 small (4oz.) Cool Whipe.  Spread on top of filling and regrigerate.

FRIED GREEN TOMATOES
3-4 Green Tomatoes
1 egg-beaten
3/4 c. flour or yellow cornmeal
1 tsp. salt
1/2 tsp. pepper

Slice tomatoes.  Dip into beaten egg, ten into the flour, salt & pepper mixture.  Fry in hot oil until nicely browned on both sides.
